I love cornbread. I love waffles. I LOVE CORNBREAD WAFFLES. I wanted a vehicle other than a bun to host my BBQ pulled pork, and, after some brainstorming, came up with these super easy and supremely delicious waffles. Gluten, dairy, and sugar free ta boot!
1 cup cornmeal
1/2 cup almond milk
1/2 yellow onion, very finely chopped
1/2 green bell pepper, very finely chopped
1 tbsp melted ghee
1/2 tsp kosher salt
1/4 tsp pepper
1/4 tsp garlic powder
Combine all ingredients in a large mixing bowl. Preheat your waffle iron (I use a medium heat setting) and coat with avocado oil spray. Pour in batter and cook until slightly browned or to your liking.
*Enjoy with BBQ pulled pork and slaw, or fried eggs and bacon, or whatever floats your waffle boat!
