1 lb. fresh green beans
1/2 cup slivered almonds
Juice of 1 lemon
Zest of 1 lemon
2 tbsp extra virgin olive oil
2 tbsp butter (sub ghee for Whole30)
Salt & pepper to taste
Bring a large pot of heavily salted water to a boil. Blanche the green beans for 2 minutes, and place immediately in an ice bath.
In a wide saucepan, melt the butter and oil over medium high heat. Add the almonds and brown for about a minute and a half or until lightly toasted. Add in the green beans, lemon juice, and zest, and salt and pepper, combine well, and remove from heat.
