Cauliflower Mash

Cauliflower is a rockstar vegetable and I'm so glad she's getting her moment in the sun lately. I typically prefer to buy unpackaged whole fruits and veggies, but I must admit...I'm often grateful for Trader Joe's bagged cauli rice. It just makes life a little easier. It definitely makes this mashed cauliflower recipe super easy. And easy is nice.


Ingredients:


2 16 oz bags riced cauliflower

2 cloves garlic, chopped

1 tbsp ghee

1/3 cup full fat coconut milk

1/3 cup chicken or vegetable stock

Salt & pepper


Melt the ghee in a large saucepan or Dutch oven. Sauté the garlic over medium high heat for about two minutes or until fragrant and slightly browned. Add the cauliflower and toast for about two minutes, stirring frequently. Add the coconut milk and chicken stock and cook for another five minutes, stirring frequently. Remove from heat and combine with an immersion blender (or transfer to a blender). Add salt and pepper to taste.


*Serve with a steak, or fool the kids into thinking it's mashed potatoes on top of their Shepherd's pie. ;)
