I almost never buy frozen spinach, but I recently found myself with an abundance of it after a visit from my mother who uses it all the time. I love spinach and I hate food waste, so I put my thinking cap on and came up with this super easy dairy-free creamed spinach! It's thick and luxurious and makes a great compliment to a grilled steak or a piece of roasted chicken.
Note on the cashews: I have a Vitamix, which works super well, so I don't soak the cashews for long--just a few minutes in hot water and then drained. You may need a longer soak if your blender isn't as powerful.
Ingredients:
32 oz frozen (or fresh) spinach
1 cup raw cashews (soaked and drained)
1/2 cup water
2 tbsp nutritional yeast
2 cloves minced garlic
2 tbsp extra virgin olive oil
2 tsp ground nutmeg
Salt & pepper to taste
Combine all ingredients except spinach in a blender and blend until smooth.
Empty the frozen spinach into a wide saucepan or pot and let defrost and steam over medium heat for about 10 minutes, stirring frequently. When it is fully defrosted, turn off the heat, fold in cashew mixture, and combine well. (If using fresh spinach, wilt it in batches with a bit of water until it’s cooked down before adding cashew mixture.) Serve and enjoy!
