Ingredients:
1 1/2 cups almond flour
1/2 tsp baking soda
1/8 tsp salt
1/3 cup maple syrup
1/4 cup melted ghee
2 tbsp lemon juice
1 tbsp lemon zest
Preheat oven to 350 degrees.
In a large bowl, combine maple syrup, melted ghee, lemon juice, & zest. Add dry ingredients and mix thoroughly. Let dough stand at room temperature for five minutes and then chill in the refrigerator for at least twenty minutes.
When chilled, form dough into balls (about 3/4”...I got a dozen cookies this way) and space evenly on a parchment lined cookie sheet. Bake for 15-20 minutes or until slightly crisp at the edges.
